Sunday 14th – French onion soup topped with macaroni cheese croutons
Monday 15th – Sausage and bean hotpot – made using Vbites Lincolnshire sausages
Tuesday 16th – Pizza – going to give making these quick frying pan pizzas a go, mine will be topped with fennel, new potatoes, olives, griddled courgette and mozzarella. Plus a green salad on the side.
Wednesday 17th – Mixed bean chilli with rice
Thursday 18th – Corn & black bean burgers served in a bun with chipotle mayo and salad with sweet potato fries.
Friday 19th – Tandoori paneer massala, aloo sag and chilli and garlic naan.
This week I am hoping to get more tiling done and to finish painting one wall in the basement. I also want to go out running again, it is a great way to shake off all the cobwebs and to forget all the horrible things going on in the world.
Tomorrow we plan to do the second part of a walk we did a few weeks ago. We completely ran out of time as the going on the first have was pretty tough (on the moors, no path and just lots of scrubby heather and moss) We had some breathtaking views though, so I am looking forward to a hopefully easier route on part 2.
In car news, we have the electric car and have the charging point installed. So we are a step closer to our eco goals. Next on the list of big items is solar panels, but that will have to wait for a bit – unless I find a well paid job soon.
I am amazed how easy we are finding being veggie, I do not miss meat really. I did feel hungry when I walked past the neighbours and they were frying bacon and I am still not that happy with a meat free roast. I need to find a replacement for the meat that is a bit more interesting than a roasted cauliflower or veg in cheese sauce.
