When I was making the meal plans for this week Mr CK requested we had a meat based roast dinner, this is only the second time this year we’ll have made a roast, so we are making a pretty good effort at reducing our meat consumption.
Saturday 20th – Roast beef, Yorkshire pudding, roast potatoes, mashed butternut squash, carrots, peas, broccoli and red wine gravy.
Sunday 21st – Pad Kra Prow Nuar (stir fried beef with holy basil) I’ll make a soba noodle dish and a stir fried veggie side for this.
Monday 22nd – Baked potato with 3 bean chilli and cheese.
Tuesday 23rd – Sweet potato falafel with hummus, green leafy salad, pita bread and yoghurt dip.
Wednesday 24th – Cauliflower, lentil and coconut curry with rice and peshwari naan.
Thursday 25th – Pizza – with a few salad sides.
Friday 26th – Out for our local curry night.
The beef will stretch to 3 meals, we’ll have beef baguettes for lunch on Sunday, it is a simple meal, thin slices of beef in a buttered baguette with a load of fried onions on top. If we are lucky we might have enough for a sandwich on Monday too. Then it will be back to veggie food again, which I am sure we will be look forward to after a meat heavy day or two.
I already know what I am going to have on at least one day next week after spotting this wonderful sounding meze feast from Ottolenghi. I’m also keen to try scrambling tofu and to find some decent veggie sausages so I can do a proper veggie brinner.
Running did not happen, I ached quite a bit last week (thanks damp weather) hopefully I will get a run or 2 in this week coming and kick start my fitness again.
We have a bank holiday coming up, so we plan to spend it finishing the tiling in the basement, there really is not a lot left to do now, once the tiles are set we then get to have the fun of grouting. I’ve never grouted such a large space before, so it will be a steep learning curve.
