Dairy Free Style Your Breakfast challenge with Vita Coco – coconut pancakes

 

Always up for a challenge and not a lover of cow milk I decided to take on the dairy free style your breakfast challenge with Vita Coco and Foodies100. I love pancakes, so decided to have a go at making blueberry and coconut pancakes with Vita Coco milk alternative. I was very happy with the results. Delicious, fluffy and light.

Coconut and blueberry pancakes –  makes 8

Ingredients

  • 100g coconut flour
  • 100g plain flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • 250 ml Vita coco coconut milk
  • 1 large egg
  • 100g blueberries (I used frozen)
  • A little oil for frying

Method

  1. Put the flours, baking powder and sugar in a bowl.
  2. Pour in the Vita coco milk and whisk
  3. Add the egg and whisk again
  4. Stir in the blueberries
  5. Heat the oil  in a large frying pan (I used smallest gas burner on max heat)
  6. Ladle in the batter (aim for 2-3 tbsp per pancake)
  7. cook until bottom is browned and flip (3 mins per side)
  8. Serve straight away, you’ll either have to cook in batches or juggle several pans. I had them with strawberry, toasted coconut and a drizzle of honey.

Serving suggestions

Change the blueberries for pineapple (add a dash of lime too). Serve with bananas and some syrup.

Add ice cream and some raspberry syrup and have these for pudding rather than breakfast.
