Veggie meal plans – week 2

Week one of our veggie meal plan went well. We only deviated once when I discovered we had rancid mushrooms, so the stroganoff became a veggie risotto. Trying a few new dishes again this week, so expanding our repertoire and hopefully shrinking our waistlines.

 

Week 2 – Veggie meal plans

 

Saturday – Mushroom stroganoff with rice, crusty bread and a green salad.

Sunday –  Mixed mushroom and panko aubergine hirata bun, this is my first time making these, we had them in wagamama and they were so good, the nicest thing we ate there that day by miles. I hope my home made effort does it justice.  These will be with sweet potato fries and a chilli dipping sauce

Monday –  Macaroni, chickpeas and tomato sauce. A Nigel Slater recipe. You can find it here.

Tuesday – Pizza – topped with olives and char grilled vegetables – plus a side salad

Wednesday – Pear, walnut and blue cheese quiche with baked potato and green beans.

Thursday –  Mattar paneer, Makhani dal, rice and garlic naan.

Friday –  Hoisin tofu with stir fried brown rice and vegetables.

Breakfasts, snacks and lunches

Breakfasts will be mostly toast, cereal, waffles, yoghurt and fruit and egg, quorn bacon and guac on toast.

Lunches soup and bread grilled tomatoes and cheese or a pasta salad

Snacks fruit or flapjacks or cheese and biscuits.

Sunday, Monday and Friday are all new to me dishes. I am hoping they are good so I can blog about them and share them, being veggie for this month is certainly getting me thinking about what we are eating and alsoo trying things I have no had before. We tried quorn bacon this morning, which was actually ok, a bit smoky bacon crisps flavour but slightly soft in texture. I think next time it will be fried for a lot longer than the packet says and fried in butter. Everything taste better with butter 🙂

I’ve now done 4 runs over this week, which for someone who has not run in over 20 years is not too shabby. Just have to remind myself I am not competing with all the super fit runners who whizz by me, I am the beginner and one day I too will be the  one whizzing along < ok maybe going a bit faster than captain slowcoach like I am now.

I’ve also decided to volunteer at a local charity, but more about that when/if they need me. I want to get out more, do some good, meet people and have something on my cv that is recent and shows I am not a spoiled stay at home housewife who just sits and paints her nails all day.

What is everyone else up to this week, any exciting plans now we have Christmas and the new year out of the way?

    Love the idea of more veggie meals and well done with the running!

    I’m trying to get organised now Christmas is gone, getting back into meal planning and trying to shift my remaining weight I’d like to lose.
