Yorkshire baked chicken (YBC)
I do like a big old bucket of fried chicken every now and then, but we do not have a fried chicken shop near enough to get a delivery or to grab a takeaway to eat at home. This is why I came up with Yorkshire baked chicken. Â A make at home slightly less calorific version.
The Marinade
This is not really a recipe, more a guide to how to make really delicious baked chicken. To marinate 4 drumsticks and 4 thighs I use the following:
1 pot of buttermilk
1 tbsp Reds chicken seasoning
1 teaspoon each of smoked paprika and oregano
A pinch each of salt, white pepper and black pepper.
The chicken is skinned and slashed and put in the marinade for at least 6 hours. It is best if you can do it overnight.
The excess buttermilk marinade is shaken off and the chicken lightly dusted/dipped in seasoned flour (salt, pepper and a smidge of cayenne).
I then put the chicken on a well greased baking tray and bake at 180c for 30 – 40 minutes.
The finished dish
We had it with fries and a simple salad, it is also good with flatbread and salad, with cous cous or with sweet potato fries. It is equally as delicious cold as part of a picnic.
