After another really fabulous vegetarian meal at our local cafe (The Blue Teapot – Mytholmroyd) I wanted to get more vegetarian meals into our plan. I do eat meat, but seem to be enjoying it less these days and my body does seem to feel better on a mostly vegetarian diet.
Saturday – Pizza topped with all those bits and bobs lurking in the fridge, so olives, asparagus, roasted peppers, red onions, mozzarella and basil.
Sunday – Saag wala murgh (chicken in spinach gravy) with methi paratha and sitaphal (butternut squash with fennel) These are both recipes from my latest charity shop book – Indian Everyday. we will also have poppadoms and raita/chutney.
Monday – Creamy mushrooms with spaghetti – plus a green salad.
Tuesday – Tofu bulgogi with stir fried veggies and soba noodles (if I can find them) if not with regular rice noodles.
Wednesday – Cheese and onion quiche with baked potato and salad.
Thursday – Roast dinner – I have a supermarket nut roast type thing in the freezer, we’ll have this with roasted new potatoes and veggies.
Friday – Black bean burgers – Just going to wing it with this one, if they come out that bad then it’ll be chip butties for tea.
This week I plan on giving both myself and the house a good deep clean, get everything feeling sparkling and fresh. For me this means getting up a bit earlier so I can do a little yoga before our morning walk, then during the day I plan on doing 30 minutes of interval training. Hopefully this will tone me up, give me more energy and snap me out of my can’t be bothered mood.
