Meal Planning Tuesday – a short week

Meal planning is Tuesday this week, the bank holiday weekend kind of scuppered my attempts to plan properly, so this is the hastily thrown together plan that uses up lots of bottom of the freezer bits and pieces.

Tuesday – Pizza – toppings from a selection of Mozzarella, olives, gammon, mushrooms, pineapple, roasted peppers, tomatoes, basil, red onion and feta.

Wednesday – Fritatta – new potatoes, broad beans, peas, asparagus.

Thursday – Corn and Halloumi wraps with salad & roasted veggies

Friday – BBQ ribs, burgers in buns with sweet potato fries

I am trying bit by bit to reduce our meat consumption, I’m not sure we could ever be totally veggie, but think we could be at least 5 days a week to start and see how we go from there. If I could find a good alternative to sausages and steak then it would be easy, but alas no such thing currently exists. I have read they have managed to make a burger that is not meat, but tastes and feels like it is. So who knows, maybe in my lifetime I’ll manage to be completely meat free.
